1. Remove the skin and bones from the chicken and dice the meat.
2. Place into a large bowl with celery and apples.
3. Stir through the raisins.
4. Gently toss together with the mayonnaise and chives and season to taste with salt and black pepper.
5. Place the lettuce leaves on 4 plates or one serving plate.
6. Spoon the chicken salad on top and sprinkle with the cashew nuts.
Note: This salad can also be used as a filling for sandwiches, pita pockets or bread rolls.
