1. Preheat oven to 210 C
2. Heat oven proof pan on stove top
3. Rub lamb with sea salt, pepper and Olive Oil
4. Put in pan serving side down to colour then brown meat all over, remove from heat and place pan in oven to cook for approx 11/4 hours, take out to rest in a warm place for 10 mins.
1. Pre-heat oven 200 C
2. Mix all ingredients together and bake for 20 mins turning occasionally until golden
