For the dressing:
- Whisk together the extra virgin olive oil, reserved smoked-tomato-infused oil and red wine vinegar. Season to taste.
For the salad:
- Pile the watermelon chunks into a bowl or onto a platter, then scatter over the red onion, goat’s cheese, Bee Lane cold smoked tomatoes, mint, and fennel seeds
- Drizzle dressing over salad and serve at once
Note: If you're not a fan of goat's cheese, regular sheep or cow's milk feta is equally good with this dish.
