Watermelon, Goat's Cheese & Bee Lane Cold Smoked Tomato Salad

How to

For the dressing:

  1. Whisk together the extra virgin olive oil, reserved smoked-tomato-infused oil and red wine vinegar. Season to taste.

For the salad:

  1. Pile the watermelon chunks into a bowl or onto a platter, then scatter over the red onion, goat’s cheese, Bee Lane cold smoked tomatoes, mint, and fennel seeds
  2. Drizzle dressing over salad and serve at once

Note: If you're not a fan of goat's cheese, regular sheep or cow's milk feta is equally good with this dish.

Handy Tips

There are a few variations on this delicious salad out there in the world – but with the addition of our Bee Lane cold smoked tomatoes, it takes it to another level!

Serve with Greek lamb, barbecued prawns, ribs, chicken, or just dive in and enjoy.

For the salad:

  • 1 tub Bee Lane cold smoked tomatoes, drained (reserve oil)
  • 1 small red onion, thinly sliced
  • 1.2 kg approx. watermelon, peeled and cut into chunks
  • 100g goat’s cheese (we used ‘ashed’), crumbled
  • 1 tsp fennel seeds, lightly toasted
  • several sprigs of mint leaves, washed and torn into rough pieces 

 

For the dressing:

  • ¼ cup extra virgin olive oil
  • reserved oil from Bee Lane cold smoked tomatoes
  • 1 Tb red wine vinegar
  • sea salt & freshly ground black pepper to taste
