Banana Aioli

How to


  1. Place the eggs, lemon juice and dijon mustard in a stainless steel bowl, whisk well.
  2. Slowly add oil whilst whisking rapidly, continue adding the oil until it resembles a thick mayonnaise.
  3. Smash your banana in a separate bowl with a fork and add it to the aioli.
  4. Mix well until properly combined.

To Serve

I have made my favourite burger of beef, bacon + blue cheese and I put this aioli on it every time.

Handy Tips

As a general rule aioli has garlic in it but I have converted this recipe to utilise the gorgeous Sweeter Bananas available here in Western Australia. Give it a go!


  • 5 whole eggs
  • 2 lemons, juiced
  • 2 tbsp dijon mustard
  • 700ml vegetable oil
  • 100ml olive oil
  • 1 Sweeter Banana
