Chilli prawns with mango salsa
Method
(This recipe was kindly provided by Urban Forager.) Serves 6 to 8 as a starter or side dish.
Skewer the prawns.
Mix all the marinade ingredients together. Pour into a glass or ceramic dish or tray that is long enough to lay the prawn skewers flat.
Arrange the prawn skewers on the tray, ensuring they are coated in the marinade, and leave in the fridge for at least an hour.
To make the salsa, place all the ingredients in a serving bowl and gently combine. Cover and refrigerate until ready to serve.
When the prawns have marinated, fry them in a hot skillet or pan for 2 to 3 minutes each side or until golden and slightly pink.
Remove to a plate and serve immediately with the salsa.
