Christmas pikelets
Method
This is a fun recipe to make with the kids. They can do the decorating.
Sift dry ingredients into a bowl. (You don’t necessarily need to sift caster sugar, but just make sure it doesn’t have any lumps.)
Add eggs, milk, vinegar, salt and butter and beat with a wooden spoon until smooth and thoroughly mixed.
If the batter looks a bit too thick, stir through a splash more milk.
Add small spoonfuls of batter to a hot frying pan (ideally a non-stick pan) to form small circles, and turn over when you see bubbles form in the batter (about a minute), and cook on the other side for another minute.
Aim for a golden brown colour but keep a close watch – you don’t want to burn them.
Remove to a plate and keep warm. Repeat until all the batter is used.
When ready to serve, layer three pikelets on top of one another and smear with a layer of cream. Put the strawberry on top (tip facing upwards as per the picture) and add a dollop of cream on the berry’s tip to create “Santa’s hat”.
Dust with icing sugar for a snowy effect.
Handy Tips
While these are perfect to decorate with kids for Christmas celebrations, you can make the pikelets at any time. Serve with your favourite berries and cream, or simply butter as soon as they come out of the pan and enjoy them warm.
