Citrus marinated chicken

Combine all the marinade ingredients in a large, resealable plastic bag.
Add the chicken thighs and seal the bag. Gently massage the marinade into the chicken, turning to coat evenly.
Refrigerate for at least four hours.
Grill chicken, covered, over medium heat for five to seven minutes on each side, or until cooked through.
Paired with a light and healthy salad during the warmer months or some cosy and comforting roast veggies during the cooler months, this is a great meal for any time of the year. The zesty, tangy flavours are reminiscent of a Mediterranean dish and really make the chicken sing.
