Classic cheesy toasties
Method
(This recipe is from the Buy West Eat Best Mini Cookbook.) Serves 1.
Use a pan over medium heat, an air fryer at 180C, or a sandwich press on medium.
Butter the outside of both bread slices. Place one slice butter side down, add cheese, then top with the second slice butter side up.
Heat until golden and crunchy. Pan: 2–3 minutes per side; air fryer: 5 minutes (flip halfway); sandwich press; 4-5 minutes.
Let sit for 1 minute before eating; the inside will be very hot.

- Cheese & tomato – cheddar + sliced tomato
- Ham & cheese – ham + cheddar
- Chicken & cheese – leftover roast chicken + cheese
- Bacon & egg – bacon + fried egg
- Mushroom & cheese – sauteed mushrooms + cheddar
- Spinach & cheese – baby spinach + cheddar or feta
- Tomato & avocado – sliced tomato + mashed avocado
- Apple & cinnamon – sliced apple + cinnamon + a little butter
