Dippy eggs & soldiers
Method
(This recipe is from the Buy West Eat Best Mini Cookbook.) Serves 1.
Gently place eggs in a saucepan in a single layer. Cover with cold water (about 1cm above eggs).
Bring to a rolling boil, then reduce to a gentle simmer.
Cook to your liking – soft (runny yolk) 3 mins; medium (jammy) 5 mins; hard (fully set): 8 mins.
Toast bread until golden, butter generously and cut into strips (2–3 cm).
Remove eggs with a spoon. (Optional: briefly dip the egg in cold water to stop cooking.)
Place in egg cups and crack the tops. Season yolk and dip soldiers.

Handy Tips
One egg contains about 6g of high-quality protein. Eggs are also nutrient-rich and keep you full for longer. Enjoy them boiled, fried, poached, scrambled, or baked into frittatas, muffins and more.
To quickly check the freshness of your eggs, fill a bowl with cold water and gently place the egg in. If it sinks and lies flat, it's very fresh. If it sinks but stands upright, it's still OK but use soon. If it floats, throw it out. Eggs float because air enters the shell as they age.
