Hot & sour banana salad
To make the dressing, combine all ingredients in a jar, shake well. Set aside until serving
Slice the bananas, pick the ends off the bean shoots, remove the herbs from their stems, wash and spin dry.
Chop the chillies and toast the shaved coconut until golden.
Arrange the bananas on a bowl or plate, sprinkle with bean shoots, chillies, fresh herbs and toasted coconut.
