Mandarin, blue cheese & almond salad

Method

(Recipe kindly supplied by Moora Citrus)

In a large bowl, combine mandarins with rocket, shallots, almonds and blue cheese. Set aside.

Add vinegar, orange juice, mustard and tarragon to a small bowl. Whisk until well combined. Slowly drizzle olive oil into dressing and continue whisking until well combined. Add salt and pepper to taste.

Toss salt with vinaigrette and serve immediately.
