Slow-roasted tomato toast with fior di latte

Method
Preheat oven to 160C.
Combine the tomatoes, garlic, lemon and oil in an ovenproof dish.
Season and place in the oven. Roast for 30-40 mins.
Lightly press on the tomatoes to release their juices into the oil and mix.
Spoon the tomatoes onto the sourdough slices.
Top with fior di latte from Borrello Cheese and toast in the oven for 5-7 minutes, until the cheese is golden and bubbly.
Serve immediately.
