Smash burger tacos with spicy avo dressing

Method
To serve
Preheat oven grill to 250C.
To make the salsa, combine all the ingredients in a bowl. Season to taste.
To make the spicy avo dressing, put all ingredients into a blender and mix to desired consistency. Taste and adjust lime and pickling juice to your liking. (Alternatively, combine ingredients in a medium bowl, mash with a potato masher, then stir well to desired texture.)
Line a baking tray with baking paper or lightly spray with oil and place tortillas on a tray.
Place a burger on each tortilla and use the back of a spoon to spread beef to the very edges of the tortilla. It will spring back when cooking so really hit the edges of the tortilla.
Use the blunt end of a butter knife (or similar) to make an indent down the centre of the mince mixture. This will allow the taco to be folded once cooked.
Place the tray under the grill and cook for about 8 mins or until the burgers have caramelised and are cooked through.
Sprinkle cheese over one side of each burger then return to the grill for 1 minute or until cheese is bubbling and starting to brown. Then dust each taco with a little smoked paprika.
Finish the tortillas with a generous spoonful of the dressing and top with a serve of salsa.
Handy Tips
For the spicy avo dressing, thin with extra water as desired (start with ¼ cup).
Serve with finely sliced cos lettuce, lime and cucumber wedges.
For a dairy-free option, omit the cheese or use vegan cheese if you enjoy it.
