Stewed rhubarb with star anise & vanilla

Method

Place all ingredients in a medium-sized saucepan over low heat.

Simmer for 15 minutes until rhubarb is very soft. Remove star anise and vanilla pod.

To serve

Serve with Greek yoghurt and granola or spoon warm over porridge.
