Akoya are a beautiful, natural treasure that grow in Albany, Western Australia. Famous for producing spectacular saltwater pearls, our bespoke aquaculture techniques, combined with the pure WA environment, have turned the Akoya into a delicacy in its own right.

Albany’s flora heavily influences the organic food sources of our rock oysters, providing layers of complexity that are unique to southern WA.

Our shellfish are the first aquaculture products in Australia to be certified carbon neutral.
