Method

Pat dry the D’Orsogna pork loin half ribs using a paper towel and cut them into two sections so they fit into the air fryer basket.

Combine the salt, pepper, smoked paprika, Italian seasoning, garlic powder, coriander and rosemary in a small bowl. Rub the ribs with olive oil, then coat evenly with the spice mix.

Preheat the air fryer to 190C for 3 minutes. Place the ribs meat-side down in the basket and cook for 15 minutes.

Flip the ribs and cook for a further 10 minutes at 190C.

While the ribs are cooking, prepare the sauce. In a small saucepan, combine ketchup, brown sugar, apple cider vinegar, olive oil, cumin, salt and pepper. Heat over medium-low until the sugar dissolves and the sauce thickens slightly.

Remove the ribs from the air fryer, brush generously with the BBQ sauce, and return to the basket. Cook for 2–3 minutes at 200C to set the glaze.

Allow ribs to rest for 5 minutes before serving.
