Air fryer potato & haloumi fritters

Method
(Recipe by Carly Rossbach-Smith from Perth Munchkin. Makes 12-14 balls. Serves 2-4 as a snack)
Boil the potatoes whole with their skin on until they are slightly soft.
Once you can poke the potatoes with a fork, drain them and allow to cool (enough so you’re able to hold them).
Grate the potatoes and haloumi, using the coarse side of a grater, into a large bowl.
Add the cornflour and season with salt and pepper. Combine ingredients well with your hands.
Brush the bottom of the airfryer basket with olive oil so the fritters don’t stick.
Using two large metal spoons, create balls of the mixture and place the fritters the air fryer, ensuring there are some gaps between them. (You may need to do this in two to three batches, depending on the size of your air fryer.)
Brush some olive oil on the top of each fritter. Air fry them for 12-15 minutes at 200C, or until golden.
Serve immediately with some Franklin & Clement Jammed Chilli.
