Albany Rock Oysters with pineapple & basil mignonette

Combine diced shallot and vinegar in a small bowl to mellow the flavour while preparing the other ingredients.
Add pineapple, basil and salt to the shallots and toss through. Spoon onto the oysters and serve immediately.
