Beef tacos with hot green sauce

Combine beef marinade ingredients in a bowl and marinate beef.
Set aside on the bench to bring to room temperature.
To make the salsa, combine all ingredients in a bowl and season to taste.
To make the hot green sauce, blitz all ingredients in a blender until vibrant green and smooth.
Taste for balance of flavours and adjust accordingly. Pour into a serving jug.
Cook steak on a hot plate for about 4 minutes each side or until medium rare.
Allow to rest for a few minutes in a warm place and then thinly slice.
Heat tortillas in hot oven for 5 minutes to warm through.
Put all the ingredients in the middle of the table for people to help themselves.
