- Preheat oven to 200C. Arrange bacon rashers on an oven tray lined with baking paper and cook for 12-20 minutes until crispy (time required will depend on the thickness of bacon). Drain on kitchen paper. When cool, chop bacon finely and set aside.
- Bring a large saucepan of water to boil and salt. Blanch beans for 5 minutes then remove from saucepan and transfer to a bowl of ice water for 2 minutes. Drain well.
- In a small clean jar, combine olive oil, vinegar, garlic clove, mustard, honey and salt. Tighten the lid and shake to combine, then leave for garlic to infuse into the dressing.
- To serve, add beans to a serving dish. Shake dressing jar vigorously then drizzle dressing over the beans, omitting the garlic clove. Top with crispy bacon pieces to serve.
For a nutty twist, add toasted walnuts to the bacon topping.
