Lupin, cinnamon & coconut granola

Lupin Cinnamon Coconut Granola

Method

Makes enough to fill 500ml container. (This recipe is kindly provided by The Lupin Co.)

Preheat oven to 160C.

In a bowl, toss all the ingredients except the goji berries until well mixed and evenly coated.

Transfer the mix to a baking tray lined with baking paper.

Roast in the oven, tossing occasionally, until golden brown. Allow 15 to 20 minutes baking time, depending on oven.

Leave granola to rest on the baking tray while it cools; this will allow it to dry out and crisp up.

Once cool, add goji berries and mix to combine.

To serve

Serve on top of Greek yoghurt with your favourite fresh fruit.
