Non-alcoholic fruit punch

Method

(Serves 4-6)

Prepare the mango puree and ice the day before serving.

Take two of the diced mangoes and put in a small saucepan with the lime juice over medium heat. Simmer for about 10 to 15 minutes, reducing the fruit to a jammy consistency. Mash up the mango pieces with a spoon to help break them down.

Remove from the heat and place in the fridge to cool. Once cool, pour some of the puree into ice cube trays, to about a quarter of the way up. Top with water and place in the freezer overnight.

When ready to serve the punch, slice the apple into thin slices, and halve the strawberries.

Pour the mango puree into a tall serving jug. Add fruit cubes and chopped fruit.

Add 1-2 bottles of NewLeaf Orchard sparkling apple juice and top up the jug with soda water (taste for preference).

 

To serve

Serve in iced glasses with wedges of lime.

You could also freeze some small pieces of apple, strawberry or edible flowers in the ice cubes in the same way to add to the punch.
