Watermelon, goat’s cheese & smoked tomato salad

To make the dressing, whisk together the extra virgin olive oil, reserved smoked-tomato-infused oil and red wine vinegar. Season to taste.
To make the salad, place the watermelon chunks into a bowl or onto a platter, then scatter over the red onion, goat’s cheese, Bee Lane cold-smoked tomatoes, mint, and fennel seeds.
Drizzle dressing over salad and serve immediately.
There are a few variations on this delicious salad but the addition of Bee Lane cold-smoked tomatoes takes it to another level. Serve with Greek lamb, barbecued prawns, ribs, chicken, or just dive in and enjoy as it comes!
If you’re not a fan of goat’s cheese, you can substitute with regular sheep or cow’s milk feta – either works just as well with this dish.
