Lupin and Za'atar Crumbed Dorper Lamb Cutlets with Moroccan Roast Pumpkin and Lupin Salad has been anointed WA’s Signature Dish at Buy West Eat Best’s inaugural WA’s Signature Dish competition held in Perth today.
Rhiannon Birch from the Perth & Surrounds region said that keeping it simple and using fresh, local regional produce was her recipe for success in winning today’s cooking competition, an initiative supported by the Department of Agriculture and Food’s Buy West Eat Best program.
The winning dish featured local Western Australian Dorper lamb cutlets.
Four talented finalists from the Gascoyne, Great Southern, Southern Forests and Perth & Surrounds battled it out in a live Grand Finale cook off as part of Celebrate WA’s ‘Come Out & Play’ event in the Perth Cultural Centre for WA Day.
Television personality and cook Anna Gare and WA food ambassador Don Hancey compered the battle and the dishes were judged by a panel of high profile food industry experts: Guillaume Brahimi of Bistro Guillaume, Ralf Vogt, Executive Chef Crown Perth, and Rob Broadfield, well-known food critic and columnist for The West Australian.

Guillaume Brahimi said it was a tough decision to choose the winner on the day but Rhiannon’s dish ticked all the boxes for the judges.
“The dish really showcased the beautiful fresh produce from the Perth & Surrounds region and tasted just as good as it looked,” Brahimi said.
As the winner of WA’s Signature Dish Rhiannon will receive two nights accommodation at Crown Perth and two days personal mentoring at Bistro Guillaume with Guillaume Brahimi.
Launched in March, WA’s Signature Dish aims to showcase the best of WA food bringing together talented home cooks and some of WA’s most popular chefs.
The competition has been organised by the Department of Agriculture and Food through local food labelling program Buy West Eat Best, and supported by its partners Celebrate WA, Gascoyne Food Council, Southern Forests Food Council, the Great Southern Development Commission and Taste Great Southern.
