Winner of 2015 W.A.'s Signature Dish, Gascoyne's Jerolina Rankin, last week received the last component of her much-coveted prize - a two day mentorship with Guillaume Brahimi at Bistro Guillaume, Crown Perth.
Her win in November last year, has launched Jerolina into a round of cooking and promotional engagements which she says has really helped her hone her culinary skills and enabled her to meet and work with Western Australia's top chefs and producers. The mentorship with Bistro Guillaume was the icing on the cake - literally - with her first day being spent on the pastry bench, creating macarons with a white chocolate ganache.
"This mentorship has been a fantastic experience," she said from the heat of the Bistro Guillaume kitchen last week. "I have learned so much from Guillaume's amazing team - skills I can take into my everyday life. I am so grateful to Guillaume's team for the time they have spent with me and for sharing knowledge so generously."
WA's Signature Dish Competition is staged by Buy West Eat Best in celebration of the richness, diversity and quality of Western Australian produce. The 2015 event was open to amateur cooks, with each finalist supported and mentored by one of Perth's top chefs. In 2017, the cook-off will be between W.A. media and sporting celebrities and will be performed on-stage during the WA Day celebrations in June.
