From this bounty, we handcraft a range of wholesome foods, rich in flavour and goodness, including:
Bookara Goat Dairy Curd (Cream Cheese) – a smooth, soft cheese with a lightly acid aftertaste, a very versatile product that can be used in sweet or savoury dishes
Bookara Goat Dairy Haloumi – the first cheese we made remains a signature of our range. Packaged in saltwater brine that is not too salty, our haloumi fries to a crisp brown texture with a surprisingly soft texture.
Bookara Goat Dairy Ricotta – a fresh uncomplicated cheese used to make gnocchi, and added to other favourites, such as ravioli filling, pikelets and scrambled eggs.
Bookara Goat Dairy Feta – a young cheese without a heavy gamey taste, our Persian feta is a soft cheese rich with the taste of local extra virgin olive oil.
Bookara Goat Dairy Yoghurt – a probiotic containing light creamy textured yoghurt that works just as well in a curry as it does on your breakfast cereal.
