Tzatziki sauce

Method

Squeeze and discard the juice from the cucumber.

Mix the grated cucumber, fresh herbs, olive oil, lemon juice, garlic and pinch of salt into the yoghurt.

Allow to rest for five minutes. Taste and add additional herbs, lemon juice and/or salt as desired.

To serve

Serve immediately or chill for later.
