How to


  1. Squeeze and discard the juice from the cucumber
  2. Mix the grated cucumber, fresh herbs, olive oil, lemon juice, garlic and a pinch of salt into the yoghurt
  3. allow to rest for 5 minutes. Taste and add additional herbs, lemon juice and/or salt if necessary

To serve

Serve immediately or chill for later.


  • 5cm piece cucumber, deseeded and coarsely grated
  • 200g thick Greek yoghurt
  • 2 tbsp chopped fresh mint or dill, plus a handful of leaves to serve
  • 2 Tbs extra virgin olive oil
  • 1 Tbs lemon juice
  • 1 garlic clove, pressed or minced
  • Pinch of WA salt
